Chocolate Covered Peanut Butter Rice Crispy Squares


In the fall, we always have a Fall Food Fest at work. People sign up to bring things, mostly fixings for salads, and then we all eat our lunch together. Its a nice thing. Anyway, I was eating lunch with one of the ladies in charge of this event today and asked her what they still need people to bring. She said that so far there is no dessert. I volunteered. I didn't feel like baking anything since I baked yesterday, so Rice Crispy Treats came to mind. What else is so easy to make? The recipe I ended up doing is partly from this recipe at Brown Eyed Baker, and partly from this recipe from Kellogg's. I love peanut butter in my rice crispy treats, and I have some chocolate chips and Crisco sticks, so I figured why not cover them in a nice chocolate blanket! Yum! :)


3 tablespoons Butter
1 10 oz bag Mini Marshmallows
1/2 cup Peanut Butter
6 cups Rice Crispy ceral
1 cup Chocolate Chips
1 tablespoon Shortening

Melt the butter in a pan and add the marshmallows. Stir until the marshmallows have melted. Take off the heat and stir in the peanut butter until combined. Stir in the cereal and then pour the mixture into a greased cake pan. Spray your fingers and use them to help pat down the mixture.

In a double boiler (or a bowl over a pan of simmering water), melt together the chocolate chips and shortening. Cut the rice crispy treats into squares and dip the tops of them into the melted chocolate. Put onto wax paper to allow the chocolate frosting to harden.
