This might be one of the best garlic breads that I have had. I found this recipe on Yummy Yummy Yummy. It was super easy and a perfect partner for our lasagna. We cut this recipe in half since there is only two of us, but I'd be willing to bet that we could have made the whole thing and put some in the freezer for another day.
4 cups Spinach Leaves (I used significantly less)
1 Stick Butter, softened
4 Cloves Garlic
1 cup Grated Parmesan Cheese
1 Loaf Italian Bread
Salt & Pepper
Combine butter, spinach, garlic, parmesan, salt, and pepper in a food processor and pulse until blended well. Slice the loaf of bread in half horizontally and slather the butter mixture on the bread. Put the bread under the broiler for about 3 minutes. Cut into chunks and serve.
