This recipe came from my cousin Bridget. I wanted to make these for dinner last week, but Joel is not a huge fan of stuffed peppers, so I didn't. When I came home from coaching this afternoon, I was starving so I decided to try to make this for lunch. It is super quick and easy, and its very delicious! As an alternative, making just the couscous filling for these peppers would be a great side dish to any meal!
4 Large Green Peppers
1 Box Frozen Spinach
1/3 cup Crumbled Feta
1 box Couscous (or if you have bulk couscous, make enough for 4 servings)
1 tablespoon Garlic
Hollow out the peppers and defrost the spinach, making sure to squeeze out excess moisture. Prepare the couscous according to package instructions, then add the feta when it is done. In a saute pan, combine the spinach and garlic. Cook for about 5 minutes. Add the spinach mixture to the couscous and stir. Stuff the mixture into each pepper and enjoy!
