I love pasta salads. They just scream SUMMER to me! Since today is Labor Day, I thought it would be fitting to make one last pasta salad for the season. I don't quite remember where this exact recipe came from. I think I just started to put some of my favorite things together in a bowl. All I know is that I've made it so many times and brought it to so many places, it is requested whenever I offer to bring something to someone's house! So yesterday when Joel's parents invited us over for dinner today, his mom asked me to bring along this salad.
1 package Cheese Tortellini (I buy the fresh kind, tri color for more fun!)
1 smallish Yellow Squash
1 smallish Zucchini
1 quart Grape Tomatoes
1/2 container Gorgonzola Cheese
1/3 bottle Italian Dressing
Pepper, to taste
Cook tortellini according to package directions, usually about 3 minutes if fresh. Meanwhile, cut up the squash and zucchini into bite size chunks. During the last minute of cooking, put the diced squash and zucchini into the pot with the tortellini. Drain well.
Toss the tortellini and zucchini/squash mixture into a large bowl. Cut the tomatoes in half and throw those into the bowl as well. Pour on the Italian dressing and add some fresh ground black pepper. Stir well. Allow the salad to cool before adding the gorgonzola. Stir well again. You may need to adjust the amount of dressing according to your taste.
*I've also made other versions of this pasta salad using different vegetables that I had in the fridge. The outcome is just as good, but I just happen to love squash and zucchini the best!
