Yay! This is my 100th post!! We had 2 chicken sausages in the freezer that we wanted to use up, and since it isn't snowing, we figured tonight would be a good night to grill. To go along side it, I decided to try this salad that I found on Picky Palate. It sounded really good and we already had most of the ingredients on hand anyway. That is the kind of meal I like to make, one that won't break the bank and uses up stuff we already have! This was delicious! We especially loved how colorful this salad was. It definitely brightened up our cold night!
2 cups Couscous (you could probably use less, I just wasn't thinking)
1 Red Bell Pepper, diced
1 Yellow Bell Pepper, diced
4 ounces Feta Cheese, crumbled
3/4 cup Kalamata Olives, sliced
1 Garlic Clove, minced
1/4 cup Extra Virgin Olive Oil
1 1/2 tablespoons Balsamic Vinegar
Salt & Pepper to taste
1/2 cup Fresh Parsley, chopped
Prepare couscous according to package directions and put it in a large bowl. Add bell peppers, feta, olives, and garlic to the couscous. Mix to combine. In a separate bowl, whisk the olive oil, vinegar, salt, and pepper until combined. Pour over the couscous and mix well. Stir in parsley and serve.
