This morning, it looked like a snow globe outside. Actually it still does. The weather report calls for up to 7 inches by 6pm this evening. Having said that, we wanted something warm and comforting for breakfast this morning so Joel suggested pancakes. We had no pancake mix in the house so I google searched for pancake recipes and found this one from Every ingredient is something that I always have on hand anyway. We added bananas to the mix since we had a few that were getting spotty. This recipe made 4 pretty big sized pancakes with about 1/2 cup of extra batter that Joel will use tomorrow morning. We may never buy pre-packaged pancake mix again!

2 cups Flour
2 1/2 teaspoons Baking Powder
3 tablespoons Sugar
1/2 teaspoon Salt
2 Eggs
1 1/2 cup Milk
2 tablespoons Butter

Stir together flour, baking powder, sugar, and salt. In a separate bowl, whisk together the eggs and milk. Add the wet mixture to the dry mixture stirring until smooth. Melt butter into a frying pan/griddle and pour about 1/4 cup of batter for each pancake. *This is where I put a few sliced bananas on each pancake. Cook until bubbly around the edges and slightly brown. Flip the pancakes and cook until brown on the other side.
