I had about a half of a bag of potatoes that I wanted to use before they went bad so that was a perfect excuse to try a very easy soup recipe that I found on the Food Network website. I have made a potato soup before that we both loved, but I figured I'd try something a little different this time to see how it compared. This soup was pretty good and very easy. I definitely plan to make this again.
4 Slices of Bacon, chopped
2 tablespoons Butter
2 Leeks, sliced (I only used 1)
2 teaspoons Thyme
2 teaspoons Sage
4 cups Chicken Broth
1 1/2 cups Cream (I only used 1 cup of Light Cream)
1 Bay Leaf
3 Potatoes, peeled and chopped
8 ounces Sharp Cheddar Cheese, grated
Chives/Scallions for garnish
Sautee the bacon. Drain the fat then add the butter, leeks, sage, and thyme. Add the broth, cream, bay leaf, and potatoes. Simmer until tender. Add the cheese and mix until melted and combined.
