Mushroom Ravioli with Marsala Sauce


Here is a really quick and delicious recipe, found here on Lauren's Kitchen, that we made for dinner on Friday.  I had a swim meet and didn't get home until 7:30, so we wanted something that wouldn't take too long and wasn't too heavy.  I used a mixture of frozen mushroom ravioli and mini frozen cheese ravioli that I had leftover in my freezer.

3 tablespoons Olive Oil
1/4 cup Onion, diced
1 tablespoon Garlic, minced
1/2 pound Mushrooms, sliced
3 tablespoons Flour
1/2 cup Marsala Wine
1 1/2 cups Beef Stock
Salt & Pepper, to taste
Scallions, sliced (optional for garnish)
Ravioli, cooked

Add olive oil to a heavy, hot saucepan.  Add the onions, garlic, and mushrooms and saute until tender.  Add the flour and cook for about 1 minute.  Deglaze the pan with the Marsala wine.  Add the beef stock and cook until thick and the flavors are blended.  Mix in the cooked ravioli and toss to coat.  Top with sliced scallions, if desired.
