Garlic & Parsley Fingerling Potatoes


Friday was girls' night.  My high school girlfriends and I got together for a night of dinner, drinking, crafting, and general catching up.  My friend Dana hosted, so she prepared a turkey roast as our main dish, along with steamed broccoli. Jeanne brought salad, Krystal brought bread and wine, Kristy brought red velvet cheesecake brownies (yum!), and I brought these potatoes, which I found on Cooking During Stolen Moments.  We had a great time catching up, and we got the chance to spend time with Dana's 4 month old son, who was a complete angel the entire night!  Next up for our group, the Christmas party, and I am hosting...I better start planning now!

2 pounds Fingerling Potatoes, cleaned
5 tablespoons Butter, softened
6 Garlic Cloves, minced
1/4 cup Parsley, minced
1 teaspoon Salt
1/4 teaspoon Black Pepper

Place the potatoes in a large pot filled with cold water.  Bring the water to a boil and continue boiling until the potatoes are tender, about 15-20 minutes.  While the potatoes cook, combine the butter, garlic, parsley, salt, and pepper until well blended.  Drain the potatoes and place them in a serving bowl.  Immediately dollop the butter mixture on top of the potatoes, stirring a few times to coat evenly.


Just for fun, here is the craft we made.  It is a ribbon Christmas tree.  It was super easy, but a little tedious.  Add wine into the mix and it took us each about 2 hours to complete our tree!
