Roasted Red Potatoes


I found this last month on Elizabeth's Edible and it looked delicious so I bookmarked it right away! Tonight when looking for something to eat, we decided to make Reuben sandwiches and I thought that this would be the perfect side dish. They were incredibly easy to throw together and tasted delicious. I'll definitely make these again.


1 pound Red Potatoes, cleaned and quartered
3 tablespoons Olive Oil
1/2 cup Parmesan Cheese
1/2 teaspoon Salt (I used fresh cracked sea salt)
1/4 teaspoon Crushed Black Pepper
8 Thyme Sprigs (I used about 1/4-1/2 teaspoon dried)

Mix all ingredients in a bowl to coat the potatoes and pour onto a baking pan. Roast at 400 degrees for 40 minutes, or until golden brown and crisp, stirring the potatoes about half way through.
