Sauteed Veggies, Rice, & Beans

I found this recipe on Green Lite Bites. It is the perfect simple weeknight meal, since it didn't take very long to prepare. The best part about this meal is that there are plenty for leftovers tomorrow. Joel is on his own tomorrow for dinner since I am going out for a birthday dinner with my girlfriends, so he is planning on making tacos out of the leftover veggie/rice mixture.

1 Small Vidalia Onion, chopped
1 Green Bell Pepper, chopped
1 Zucchini, chopped
1 Scallion, sliced (I added this)
1 can (15 ounces) Kidney Beans, rinsed and drained
1 can (15 ounces) Diced Tomatoes
1 teaspoon Garlic Powder
1 teaspoon Cumin
2 teaspoons Chili Powder
2 cups Cooked Rice

Cook the rice according to package directions. Meanwhile, saute onion, pepper, and zucchini until soft. Add tomatoes, beans, and spices and cook until warmed through. Add the rice to the vegetable mix and serve.
