Tuscan Style Couscous Salad

Tonight, since the weather is great, we grilled up some sausages and invited my parents over for dinner. We served this couscous salad on the side. The recipe comes from The Way the Cookie Crumbles, and it was very good.

1 1/2 cup Couscous
2 cups Water, boiling
1/2 teaspoon Turmeric
1/2 cup Pine Nuts (we used less)
1 can (15 ounces) Great Northern Beans, rinsed well and drained
1 pint Cherry Tomatoes, halved
3/4 cup Fresh Basil, shredded
1 Small Red Onion (I omitted)

3 Garlic Cloves, unpeeled
1/3 cup Lemon Juice
1/2 teaspoon Salt
Fresh Ground Pepper
3 tablespoon Olive Oil

Place the couscous and turmeric in a large bowl and mix. Pour boiling water into the bowl, mix well and cover the bowl with plate. After 10 minutes, remove the cover and fluff the couscous with a fork. Let cool. Place the pine nuts and unpeeled garlic in a small skillet and toast over medium heat for about 5 minutes. Let the pine nuts cool, then mix them into the couscous, along with the beans, tomatoes, basil, and red onion. Mince the garlic. Place the dressing ingredients into a jar with a tight-fitting lid and shake vigorously to combine. Pour the dressing over the couscous and toss well. Set the salad aside to marinate for at least 30 minutes before serving. Serve at room temperature.
