Mixed Berry Baked Oatmeal


In the mornings, I hate scrambling around trying to find something to eat for breakfast. Though we always have an overabundance of cereal in the cupboard, I'd rather have some sort of baked good. I've had a version of baked oatmeal before for a brunch I had, so I know how good it is. When I saw this recipe on Finding Joy in My Kitchen, I figured I'd give it a try. It smelled so good while cooking that I couldn't wait until breakfast tomorrow to taste it. I snuck a piece to eat with a cup of tea and it was so good!!! I'm definitely looking forward to breakfast the rest of the week!


1/2 cup Applesauce
1/2 cup Brown Sugar
1 Egg
3 cups Oats
2 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 teaspoon Cinnamon
1 cup Milk
1 teaspoon Vanilla
3/4 cups Mixed Berries (I used frozen)

In a bowl, stir the brown sugar, oats, baking powder, salt, and cinnamon until combined. Add the milk, vanilla, egg, and applesauce, and stir until moistened. Gently stir in the berries. Pour the mixture into a lightly greased 8x8 inch glass baking dish and bake at 350 degrees for about 40 minutes, or until the center is set.
