Tomato Zucchini Boats

I made this side tonight to go along with our wild rice patties. It was super easy and delicious. Any zucchini recipe is a winner in my book! I found this recipe here at Proud Italian Cook. This was such an easy thing to put together. I made it using 1 zucchini for just the two of us, but it would be just as easy to put these together for a group of 10 or more! Aside for the zucchini and tomatoes, all of the measurements written below are approximate.

1 Zucchini, halved lengthwise
3 tablespoons Olive Oil
Garlic (I used Garlic Powder)
4 Grape Tomatoes
1/4 cup Panko Bread Crumbs
1/4 cup Mozzarella, diced
Sprinkle of Parmesan Cheese

Cut the zucchini in half, lengthwise, and scoop out the seeds. In a small bowl, combine the olive oil, salt, pepper, and garlic powder. Brush the mixture into the flesh of the zucchini halves. Cut the tomatoes in half and place 4 halves in each zucchini half. Sprinkle the bread crumbs over the top of the tomatoes and zucchini. Place the zucchini in a baking dish and bake at 350 degrees for about 30 minutes. Remove and place diced mozzarella in between the tomatoes. Place the zucchini under a broiler for a few minutes, until the cheese is golden brown. Remove from broiler, sprinkle grated Parmesan cheese over the top, and serve.
