Wild Rice Patties


Today was a busy day. My dad came home after being in the hospital for 2 weeks! After a late day at work, my mom called and asked if I would go with her to pick him up. After we got him back home and settled in, I stayed for a little while to visit. It's nice to have him back home!!


So, on to dinner. These patties sounded awesome when I saw them here on Fresh 365. They were really easy to whip up, but I was a little impatient. I didn't allow my rice to cool before adding it to the mixture, so I added an additional egg to help hold everything together. Also, when the patties were setting in the pan, I tried to flip them too early and they fell apart. Patience is key, but other than that, these were delicious!

1 Egg (*I used 2)
2 cups Cooked Wild Rice, room temperature
1/4 cup Mushrooms, chopped
3 tablespoons Chives, finely chopped
2 tablespoons Mint, chopped (*I substituted parsley instead)
1 1/2 teaspoons Salt
1/2 teaspoon Pepper
3 tablespoons Olive Oil

In a large bowl, whisk the egg. Add the rice, mushrooms, chives, mint (parsley), salt, and pepper and stir well. Divide the rice mixture into 8 patties. In a large saute pan, heat the olive oil over medium heat. Add the rice patties to the pan, press down with a spatula, and cook for 5-7 minutes, or until golden brown. Flip the patties over and cook for an additional 5-7 minutes, or until golden brown.
