Last week at the store, I walked by the broccoli and it looked real good. I haven't had any in a while so I picked up a head for the week. When I was thinking of what I could do with it, I thought of a broccoli salad that I have had in the past. I looked up a recipe and found this one on Picky Palate. I altered her recipe based on ingredients I had/didn't have on hand, and I also scaled her recipe way down for just the two of us. My version is written below.
1/2 cup Mayonnaise
2/3 teaspoon Brown Sugar
1 tablespoon Honey
1 tablespoon Cider Vinegar
1/8 teaspoon Salt
1/8 teaspoon Black Pepper
Pinch of Paprika
1 head Broccoli, cut into florets (about 3 cups)
3 slices Turkey Bacon, cooked and crumbled
1/2 cup Peanuts
In a bowl, whisk together the mayo, brown sugar, honey, vinegar, salt, pepper, and paprika until combined. Put the broccoli, bacon, and peanuts into another bowl. Pour the dressing over the broccoli mixture and stir to combine.
