S'mores Granola Bars

When I was younger, we used to go camping once or twice a year.  My favorite part about camping was sitting around the campfire and toasting marshmallows for s'mores.  A few weeks ago, I saw a bunch of s'more type recipes on the blogs that I follow and it made me crave the flavors of marshmallow and chocolate.  I found this recipe on Fake Ginger and it sounded great.  Joel had something going on Wednesday night, so to pass the time until he came home, I baked these up for snacks for the rest of the week.

6 tablespoons Unsalted Butter
1/4 cup Brown Sugar
6 tablespoons Maple Syrup or Dark Corn Syrup (I used maple syrup)
2 1/4 cups Old Fashioned Oats
1/2 cup All-Purpose Flour
1/2 teaspoon Salt
1 cup Graham Cracker Crumbs (I used one whole sleeve and crushed them in the food processor)
1 cup Chocolate Chips
1 1/4 cups Mini Marshmallows

In a medium sized saucepan set over medium heat, melt and stir together the butter, brown sugar, and syrup until the sugar is dissolved.  Stir in the oats, flour, salt, and graham cracker crumbs.  Lightly grease a 9x9 inch square pan.  Press a little more than half of the mixture into the pan.  Sprinkle the chocolate chips evenly over the top, then the marshmallows.  Top with the remaining crust mixture.  Bake the bars at 350 degrees for 15-20 minutes.  Remove from the oven and let them rest for about 20 minutes.  Cut them into squares or bars while still slightly warm.
