Pineapple Mango Salsa


As I mentioned in the previous post, we packed our dinner last night and took it to the park for some live music.  I paired my shrimp with rice and this salsa from The Pioneer Woman.  I omitted the jalapeno, but the shrimp that I paired this with were hot enough, so I'm glad I did.

1 Pineapple, peeled and diced
1 Mango, diced
1/2 Red Onion, finely diced
1 Jalapeno, seeded and diced (omitted)
Fresh Cilantro, chopped
1 Lime, juiced
Kosher Salt
Sugar (optional, also omitted)

Combine diced pineapple, mango, onion, jalapeno, and cilantro in a bowl.  Squeeze the lime juice over the top and add salt and sugar if needed.
