Creamed Cukes

Between my mother and the woman next door to her, every summer, a lot of produce is produced!  I've known the woman next door for my entire life, and she is like family to us.  Not a day in the summer goes by without my mom and her trading veggies from their gardens over the fence.  When I was visiting my parents the other day, she called me over to the fence and gave me 2 big cucumbers.  I took them, even though I didn't know what I was going to do with them.

Today, I have been trying to figure out ways to use everything in the fridge before it all goes bad.  I remembered this dish that was a staple in my grandma's fridge every summer.  I called my parents for the recipe and decided to give it a try.

4 Cucumbers, peeled and sliced thin
1 Sweet Onion, sliced thin (optional-I used half of a red because I had it in the fridge)
3 tablespoons Vinegar
1 tablespoon Sugar
1/2 cup Sour Cream
Fresh Ground Black Pepper, to taste

Slice the cucumbers and onion and place them in a bowl of ice water and salt for about 15-30 minutes to crisp up.  Drain the cucumbers/onions and pat them dry.   Place them in a bowl and add the vinegar, sugar, sour cream and black pepper.  Stir to combine.  Refrigerate and serve cold.
