Blueberry Pancakes


Last night, we went to visit my parents and help bring my dad home from the hospital.  While we were there, my mom asked if we wanted any blueberries.  She had bought a giant 24 ounce container for $6.99 because she couldn't justify spending almost as much on only 6-8 ounces.  I can't say I blame her!  Anyway, 24 ounces can only go so far when there is only 1 person eating them.  She gave me a baggie full of them as I left last night.  This morning, Joel mentioned that he wanted pancakes, and we figured it would be a good way to use up some of the blueberries before we forgot about them and they went bad.  I searched for a pancake mix recipe online and found this one at food.com.  I added some of the blueberries and, voila, breakfast was served!

1 1/2 cups Flour
2 tablespoons Sugar
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1 1/4 cups Milk
2 Eggs
1 teaspoon Vanilla
2 tablespoons Oil (I omitted)
2 large handfuls Blueberries

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.  Add the milk and mix until incorporated.  Add the eggs and vanilla, stirring until combined.  Stir in the blueberries.  On a stove set at about medium heat, pour batter (1/2 cup at a time) into a buttered skillet.  When bubbles start to form, flip the pancake and cook for another few minutes, until lightly browned.
