Spinach with Pan-Roasted Red Peppers and Feta

I needed a side for the Lentil Goat Cheese Burgers that we had for dinner, so I turned to Elly Says Opa! again and found this recipe.  It was quick and easy, which was exactly what we were looking for.  Joel put some on his burger as a topping, which ended up being great!

1 tablespoon Olive Oil
1 Red Pepper, sliced into thin strips
2 Garlic Cloves, minced
2 bunches Spinach
2 teaspoons Lemon Juice
Salt and Pepper
2 ounces Feta, crumbled

Heat the olive oil in a pan over medium-high heat.  Add the peppers and cook for a couple of minutes, until the skins are slightly darkened.  Turn the heat down to medium, and continue to cook for an additional 3 minutes, or until tender.  Stir in the garlic and saute until fragrant.  Add the spinach and cook, stirring occasionally, until wilted.  Stir in the lemon juice, salt, and pepper, to taste.  Take the pan off of the heat and add the feta cheese.
