It always seems that we have the same kinds of things for dinner each night--pasta, vegetables, etc. I never switch it up! Until now, that is. When I was making my menu for this week, I thought about doing something different, like breakfast for dinner. I had this recipe from Gimme Some Oven bookmarked since last February, just waiting for an excuse to make it. I decided that Thursday was the night. I made it with some turkey bacon, since Joel isn't a big fan of breakfast sausage, and I served it with a side salad of kiwi with supremed oranges and grapefruit. Delicious!
1 (13.8 ounce) can Refrigerated Pizza Crust Dough
1 tablespoon Olive Oil
1/4 cup Chopped Onion
1 Jalapeno Pepper, chopped and seeded
4 ounces Sausage, chopped (I used turkey bacon)
4 Eggs, lightly beaten
1/2 cup Monterey Jack Cheese, shredded
1/2 cup Cheddar Cheese, shredded
1 Egg White, lightly beaten
Unroll the dough onto a baking sheet that has been coated with non-stick cooking spray. Pat the dough into a 15x10 inch rectangle. Heat the oil in a large skillet over medium heat. Add the sausage (or bacon), onion, and jalapeno. Cook for about 10 minutes, or until lightly browned. Stir in the eggs and cook for 1-2 minutes, or until set, continuing to stir. Remove from the heat. Sprinkle the Monterey Jack cheese lengthwise down the center of the dough, leaving a 2 1/2 inch border around each side. Spoon the egg mixture evenly over the cheese. Sprinkle the cheddar over the egg mixture. Make 2 inch diagonal cuts about 1 inch apart on both sides of the dough to about 1/2 inch of the filling, using kitchen shears. Arrange the strips over the filling, alternating strips diagonally over the filling. Press the ends under the braid to seal. Brush with egg white. Bake at 425 degrees for 15-20 minutes, or until the crust is golden brown. Let stand for 5 minutes, then cut crosswise into slices.
