Blue Cheese Vidalia Onions

A common thing to grill up around here is sausage with peppers and onions.  We had some sausages in the freezer that I wanted to use up, but I wanted to make something slightly different than that typical pepper and onion mixture.  When I came across this recipe from Baked Bree, I decided I wanted to give it a try.  What better thing to substitute for onions and peppers than onions and cheese?!  I only made 2 slices-worth since we had other things to use up with dinner.  The only thing I would do differently next time is make more!

1 Vidalia Onion
Olive Oil
Salt and Pepper
Maytag Blue Cheese
Panko Bread Crumbs

Slice the onion into thick slices and brush both sides with olive oil.  Grill the onions over medium-high heat until they have grill marks and start to soften.  Line a baking sheet with tin foil and transfer the onions to the baking sheet.  Sprinkle the top of each onion with panko and blue cheese.  Season well with salt and pepper.  Place the onions under the broiler until the cheese melts and the panko starts to brown.  (I did this part on the grill, too.)
