1 cup Israeli Couscous
1 1/2 cups Water
1/2-1 cup Italian Dressing, according to taste (I made some from the powdered package)
1/4-1/2 cup Feta Cheese, crumbled
Large Handful of Arugula
Boil the water in a saucepan over medium-high heat, then add the couscous. Reduce the heat to medium and bring back to a boil. Once it has boiled, turn off the heat, cover the pan, and let the couscous rest for about 10 minutes. Fluff with a fork and add the arugula, stirring until slightly wilted. Crumble in the feta cheese, then pour the dressing over the top, stirring to combine. Serve warm or cold.
