Couscous with Arugula and Feta

I had about half of a container of arugula leftover in the fridge from another recipe earlier in the week.  Before it went bad, I wanted to use it up in something.  I decided to whip up this couscous salad to go along with our grilled Italian sausage patties on Sunday night.  I threw this together on a whim, so I was very pleased when we both enjoyed it very much!  I'll definitely make this again.  *Note: the measurements listed below for the amount of dressing, feta, and arugula are approximate, as I didn't really measure while preparing this dish.

1 cup Israeli Couscous
1 1/2 cups Water
1/2-1 cup Italian Dressing, according to taste (I made some from the powdered package)
1/4-1/2 cup Feta Cheese, crumbled
Large Handful of Arugula

Boil the water in a saucepan over medium-high heat, then add the couscous.  Reduce the heat to medium and bring back to a boil.  Once it has boiled, turn off the heat, cover the pan, and let the couscous rest for about 10 minutes.  Fluff with a fork and add the arugula, stirring until slightly wilted.  Crumble in the feta cheese, then pour the dressing over the top, stirring to combine.  Serve warm or cold.
